Fresh Eats with Jenn: Rice Noodles with Veggies in a Peanut Sauce | Northern Westchester Moms

My family and I love to try new foods and cooking with my kids is a blast! This is fantastic meal that kids can help with! My kids help gather the items we need to cook with and help make the peanut sauce while I chop! Hope you all enjoy! Can be served warm or cool!

Rice noodles with veggies in a peanut sauce

Peanut Sauce

1 cup of soy sauce or tamari
1 cup of peanut butter
¼ cup of rice vinegar
1 teaspoon of ginger add more if you would like
Half of lime and lime zest

Veggies to use

2 cups of Cabbage or bok choy
2 Carrots sliced
1 pepper sliced
1 onion sliced
2 cloves of garlic smashed and sliced
Sliced cucumber

Steps:

Make your peanut sauce first: blend all of the ingredients together in a food processor or by hand. Sometimes I add a little water if it is too thick
Cook your rice noodles or rice if you would like following the directions on the package
Veggies to be cooked when you are ready to eat……cook them to still have a bite to them. Canola oil enough to coat the bottom of the pan. On a medium high heat. Do the carrots first they take the longest to cook then add your other veggies should take about 5-7 minutes to complete combine with the peanut sauce and rice noodles and you are ready to eat! Top with cilantro or scallions or both!!
