Spinach Pesto recipe

With spring upon us, I’m loving how spinach is really starting to grow! I love to make spinach pesto, which is also one of the most requested dishes in my house! I always have one of my little people make it with me and it is so much fun to do together! It’s a quick recipe that’s packed with tons of “good stuff” as my little helpers say!
Hope you all enjoy it as much as we all do!

Spinach Pesto aka spinach sauce as it is called in our house

Spinach Pesto recipe

Serves 4-6 people

Ingredients:
8-oz or 1 cup of spinach about blanched the other half is left raw
A handful of almonds
½ cup of extra virgin olive oil (add more if you need)
1 clove of garlic
Juice of half of a lemon and the zest
Salt and pepper

Directions:
1. Blanch the spinach for 5 minutes — it should still be bright green.
2. With a mini food processor or larger food processor, place the spinach — both blanched and raw — with the remaining ingredients. Blend until smooth — should still have a brighter green color.

Note: We enjoy this pesto over pasta or rice. We also put it over baked or breaded chicken as well as peas and or basil, depending upon the season and what is available in the house. It’s so versatile and lasts in the fridge for up to three days. Enjoy!
