Peach Salsa recipe from Two Wrasslin Dogs Farms | Northern Westchester Moms

 

Meet Chrys who wrote this delicious quick recipe of peach salsa to bring to your BBQ this weekend!   Corn and peaches are in season right now and are sweet!  It is a bright and fun dish to make and your guests and family will thank you!!    This Peach Salsa is a versatile and easy dish that utilizes everything that is fresh right now. Don’t be fooled by the fact that we call it a “salsa” – you can serve it as a salad or as a side dish with grilled meat. You can play fast and loose with the ingredients, which makes this fun to include your older children in the process. Plus, it’s a great way to teach knife skills!

 

Steps:

8 cups of diced “produce”, or peaches with any combination of the following vegetables: red onion, radish, scallions, cucumbers, carrots, zucchini, corn, sweet pepper, chili pepper. I like to chop everything (except the corn of course) to 1/2″ to 1/4″ dice.

1 cup of chopped cilantro

1/4 cup of fresh lime juice

Salt and Pepper to taste

Mix it all together in a large bowl, taste to correct seasoning and enjoy!
