Summer corn salad
3 ears of corn on the cob roasted on the grill
I peach grilled and sliced
Grape tomatoes
One scallion with greens
Half of a bell pepper sliced
2 radishes sliced
Dressing
One lime juiced
2 teaspoons of honey
¼ cup of olive oil
Pinch of black pepper
Pinch of salt
Put all of the ingredients of the dressing together and stir
Roast the corn on the grill I leave mine in the husks and grill until the corn is charred
Chop your veggies, scallions, radishes, tomatoes and pepper
Once your corn is done take it off the cob
Now its time to put the salad together
Add all the veggies into a bowl and add your dressing, adjust any seasoning of salt and black pepper and top with cilantro
Can be side dish or added on top of quinoa or pasta
