Fresh Eats with Jenn: Vegetable Soup with Warm Spices | Northern Westchester Moms

It was a cool spring night and I wanted to make something that warmed my soul! So, I looked in my cabinets and the fridge and came up with this delicious (and easy!) Vegetable Soup!  It was exactly what I was looking for that evening for dinner– and I hope you and your family enjoy it!

Fresh Eats with Jenn: Vegetable Soup with Warm Spices

ingredients:

1 onion chopped
1 stalk of celery chopped
3 cloves of garlic finely diced
A half of jalapeno (optional)
3 small sweet potatoes peeled and chopped
1 cup of spinach
A can of fire roasted tomatoes
A can of chickpeas drained and rinsed
½ teaspoon of turmeric
1 teaspoon of curry powder
A pinch of cinnamon
A pinch of salt
A pinch of nutmeg for your greens
½ teaspoon of pepper
3 cups of veggie broth

Directions:

Grab your favorite soup pot and start with 2 turns of olive oil at the bottom of the pan. Put your spices at the bottom of the pan that it is on medium let them bloom!  Once you smell your spices its time to add put your chopped onion, celery and garlic and jalapeno if you are adding to the bottom of the pan and stir!   

After about 2 minutes add your sweet potatoes stir them in the spices and onions, garlic and celery.   After about 2 minutes add your 3 cups of veggie broth, fire roasted tomatoes and your salt and pepper.  Let everything simmer for about 10 minutes.

As your soup is simmering rinse your cup of spinach and a little secret put a pinch of nutmeg on your greens.    Rinse your chickpeas    Once you done rinsing add those to the soup and give it about another 5 minutes for the spinach to wilt down into the soup.

Check for seasoning add more salt or pepper if needed and if your sweet potatoes are done if so you are ready to go!!
