Fresh Eats with Jenn: Warm Quinoa Salad with Roasted Vegetables

Mission if you choose to accept it – prep and cook a meal in about 35 minutes! My family and I were hungry from enjoying a beautiful spring day and I needed something that was healthy and filling. I also wanted to be able to use our grill — but this recipe can easily be done in the oven, too!! Enter quinoa to the rescue! I paired this yummy grain with a homemade dressing and instantly had an easy and delicious dinner! Check out the recipe below – hope you enjoy!

Warm Quinoa Salad with Roasted Vegetables

ingredients:
1 cup of quinoa (I use the Trader’s Joes organic quinoa) follow instructions on the package
Roasted vegetables I had in the fridge:
1 onion and 1 shallot
1 pepper any color I had orange
1 zucchini
1 broccoli crown
3 cloves of garlic
Za’atar seasoning a teaspoon
¼ cup of olive oil to coat the vegetables
Lemon dressing for the salad
Juice 2 lemons
¼ cup of Extra Virgin Olive Oil
Pepper
Salt
Za’atar seasoning ½ teaspoon

Directions:
First, start with cutting and prepping the vegetables. I cut my veggies in bigger slices when roasting, I prepped my grill at about 400 which is what I would set my oven at if I using an oven.

Once your veggies are cut, I put in a bowl to season, with olive oil, pepper, salt and Za’atar seasoning. Then place on the pan (grill pan if on the grill, baking sheet if in the oven) to roast once they are all covered with seasoning and roast for close to 20 minutes until the vegetables are tender.

Prep the quinoa with the instructions on the package. While your vegetables are roasting and your quinoa is cooking make your dressing for the salad.
Dressing for the salad, we did in a bowl, mix the juice of 2 lemons, ¼ cup of extra virgin olive oil, pepper, salt to taste and Za’atar seasoning. Stir all together!

Once your quinoa and vegetables are all ready, put this delicious salad all together, quinoa first, then vegetables I cut them into bite size pieces easier for eating, then dressing. You can add other toppings to this salad, I added feta cheese, kalamata olives. grilled chicken and tomatoes for a twist.
