My husband is half Greek and I love to celebrate the culture in many ways but food is by far my favorite!
So, I came up with some inspiration from fellow food writers to create these delicious Greek-inspired Nachos! I am gluten-free and vegetarian but that Greek husband of mine is not! So, I spilt the tray into a section and my husband and the kids get to choose. It is a great way to get vegetables happening for everyone and fun! Hope you enjoy!!
Greek-Inspired Nachos:
Tortilla or pita chips enough to fill a baking sheet
½ cup of tomatoes I slice grape tomatoes in halves (they are a staple in my house)
½ of a pepper I love red or orange they are sweeter
One minced garlic glove
1 whole shallot sliced
½ cup of Kalamata Olives (it’s a Greek Olive) sliced in half
Feta cheese either crumbled or block
1 can of chickpeas
Extra Virgin Olive Oil
Greek spices (I use a Greek seasoning from Savory Spice) but all you need mint, dill, rosemary, oregano, salt and pepper)
Tzatziki Sauce:
1 cup of Sour cream or Greek yogurt
Mint fresh or dried about a ½ teaspoon
Dill fresh or dried about a ½ teaspoon
1/3 cup English Cucumber cut into small pieces
½ of a Lemon and zest
How to prepare:
Mix all the ingredients together in a bowl. Season to taste
Roasted Chickpeas:
1 can of chickpeas rinsed and patted dry
Extra virgin olive oil
Greek Seasoning mix sprinkled
Place on baking sheet roast at 375 for 20 minutes
